RECIPE OF THE WEEK: BBQ INDIAN LAMB CHOPS

INGREDIENT LIST:

SERVES 2

2 Lamb cutlets

FOR THE MARINADE:

20g Dutch red chillies and piquillo pepper paste

20g Ginger

20g Garlic paste

15ml Oil

10ml Lemon juice

7g Papaya paste

15g Roasted gram flour

5g Garam masala

5g Kashmiri red chilli powder

3g Turmeric powder

3g Salt

3g Chaat masala

Make a paste with marinade ingredients and mix with the lamb cutlets

Marinate the lamb for at least two hours

Cook the lamb chops on the barbecue for 2-3 mins each side

Rest the meat and baste with butter and chaat masala before serving
